Chocolate Coca Cola Cake
preheat oven to 180
mix together
2 cups plain flour
2 cups sugar
1/2 tsp salt
1 tsp baking soda
1/2 tsp cinnamon

bring to the boil
1 cup butter
1/4 cup unsweetened cocoa powder
1 cup coca-cola
1/2 cup buttermilk
take off heat and add to flour mixture, whisk well.
add
1 tspn vanilla extract
2 eggs, lightly beaten (add them slowly and keep whisking so they don't cook)
pour into a prepared sheet pan, and bake about 30 mins.
The cake should be fudgy and dense.
When the cake is done, bring to the boil
1/2 cup butter
1/4 cup unsweetened cocoa powder
1/2 cup coca cola
remove from heat and add
4 cups icing sugar
and mix well.
Pour the hot glaze over the hot cake.
Allow it to set.
Serve warm or cold.

DeleteOh goodness, a guilty pleasure! I think the word ‘Diet’ will be removed from your vocabulary once you try this. Haha! Actually, I think this cake is one of the best comfort foods during our down moments. Who needs to diet when a coca cola cake can make you happy and forget all your troubles?
